In order to see them you actually have to look. I know that sounds simple, but that is the solution. Most hitters lock on to the ball before it leaves the setters hands and proceed to track the ball until they make contact. A good habit to get into during warmup and in practice is to take your eye off the ball after the set and force yourself to look into the opposing court. After a quick look you need to re-locate the ball then explode and hit it. This method takes a while to get used to, but I have found it to be effective. Most blockers establish their position early. If you are able to train yourself to look at the opposing court while the ball is in flight you will give yourself a distinct advantage over the blockers.

It's easier to look for the block when you have a reliable setter that's consistent. That allows you to focus more on your attack zone. In addition keep your chin tuck down. That means you shouldn't be looking with your nose up in the air at the ball. By keeping your chin tuck down, you keep your nose straight forward, right where there's going to be some blocking hands.
